Salmon and Spinach Frittata

Ingredients

(Serves 4)

  • 8 eggs
  • ½ cup cottage cheese
  • ½ cup grated cheese
  • 1 cup baby spinach, chopped
  • ½ teaspoon mixed herbs
  • 200 grams canned salmon in springwater, drained and flaked
  • 6 cherry tomatoes, halved

Steps

  1. Preheat the oven to 180 degrees. Grease an ovenproof dish and set aside.
  2. Whisk the eggs in a medium bowl. Mix in the cheese, spinach, herbs, salmon.
  3. Pour into the dish and top with sliced cherry tomatoes. Bake in the oven for 25 minutes or until golden and set.
